I don’t normally like avocado. But, these remind me so much of french fries, I think even the haters will show them some love.
Baked Avocado Fries
Serves 3-4
2 avocados
2 eggs
1/4 cup flour
1 and 1/2 cup panko bread crumbs
1 teaspoon salt
Olive oil cooking spray
Preheat oven to 450 degrees. Slice avocado into thin strips, about the size of typical steak fries.
Roll strips in flour and salt mixture, eggs, then panko.
Arrange on baking sheet and spray with olive oil cooking spray. Bake for 20 minutes.

avacados are a super food
