BAKED AVOCADO FRIES

I used to not like avocado at all and I still don’t normally like it. But, these remind me so much of french fries, I think even a hater would show them some love. The crispy outside and fluffy inside is totally reminiscent of some good ol’ (starchy) steak fries. Guys, I haven’t been putter measurements for salt and pepper in the ingredients list. I just put them together as a single entity and let you decide. Do you get it or wish there was a hard measurement?

BAKED AVOCADO FRIES
Serves 2-3

2 avocados
2 eggs
1/4 cup flour
1 and 1/2 cup panko
Salt & pepper
Olive oil cooking spray

Preheat oven to 450 degrees. Slice avocado into thin strips. Whisk together eggs. Coat strips in flour, followed by eggs, then panko.

Arrange on a lined baking sheet. Spray generously with cooking spray and season with salt & pepper.

Bake for 20 minutes.

  • made these tonight and they were yummy! Hubby said alittle more salt though…may try garlicsalt next time.Had them with meatloaf!

    Made these tonight to go along with reuben sandwiches. They were yummy but a little bland. Next time I will use garlic salt. Thanks for the recipe, I’d never have thought to serve avocados this way!
