We really really love salmon. This spread that goes on top of the salmon is just a bit of a game changer. It’s incredible! It has made me want to experiment more with other types of spreads that could be put on top of salmon to roast it. You may enjoy trying this for something a little different than the typical lemon slices as the flavoring on salmon. (Salmon is amazing with fresh lemon too. That will never change). This was very fun!
GRAPEFRUIT & PISTACHIO CRUSTED SALMON
Serves 3-4
4 salmon filets
2 teaspoons olive oil
2 teaspoon honey
1/4 cup grapefruit juice
1/2 cup pistachios
1/4 teaspoon paprika
Salt & pepper
Preheat oven to 425 degrees. Place salmon filets on a lined baking sheet and season with salt & pepper. Add olive oil, honey, grapefruit juice, pistachios, and paprika to food processor and pulse until a chunky paste forms. Spread topping over filets and bake for 12-15 minutes.
