Dijon & Brie Chicken from Rachel Schultz

DIJON & BRIE CHICKEN
Serves 2

2 boneless, skinless chicken breasts, thinly sliced
1/4 cup spinach
3 tablespoons dijon mustard
2 ounces brie, sliced
Salt & pepper

Spread dijon mustard over chicken and layer with spinach and brie.

Beginning at the small end, roll cutlets and place on a lined baking sheet. Season with salt & pepper.

Broil for about 10 minutes.

Instructions

  3. Season with salt & pepper.
  4. Broil for about 10 minutes.

    My broiler just has high/low settings, which should I be using? Low? What about position in the oven? Just wasn’t sure if it should be on the middle rack or closer to the heating element. Please let me know what you think. Thank you!
