Multiple baked good terms got thrown around in that recipe title. I love doughnuts, but not yet been up for investing in a whole doughnut (or doughnut hole) pan just to make them at home. The ideal scenario has been found – making the doughnut essence with a pan you already own. This is really straight forward and easy. I hope you enjoy a splendid autumn treat, grinning as nutmeg-y cinnamon sugar coats your taste buds. Be wise with who you leave alone with these.


PUMPKIN DOUGHNUT HOLES (IN A MINI MUFFIN PAN!)
Makes 36 doughnut holes
DOUGHNUT HOLES:
10 tablespoons butter, softened
3/4 cup brown sugar
3 cups flour
2 & 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon pumpkin pie spice
1/3 cup milk
1 & 1/4 cups pumpkin
2 eggs
SUGAR COATING:
3/4 cup sugar,
2 & 1/2 teaspoon cinnamon,
4 tablespoons butter, melted
1. Preheat oven to 350 degrees.
2. Beat together butter and brown sugar for 5 minutes, scraping down sides when needed. Add eggs and mix.
3. Mix in flour, baking powder, baking soda, salt, nutmeg, pumpkin pie spice, milk, and pumpkin.
4. Divide batter into greased mini muffin pan. Bake 14 minutes.
5. Allow to cool. Dunk doughnut holes into melted butter, then coat in cinnamon sugar.
