EASY COCONUT & HONEY ENERGY BITES

I am firmly dedicated to knowing some easy breakfasts because in the morning there is so much to do right away. So I have loved making these the night before and storing them in the fridge to pop out for people when they need a little something. And it is always shocking how filling you find just one or two of them. You can actually put them in the freezer as well and they stay soft for eating. They are our utility snack, breakfast, and tasty enough to even be a dessert.

This was my first time experimenting with using wildflower honey and it is SO PLEASANT. For this recipe I used sioux honey – a raw and unfiltered honey you can find in most grocery stores or purchase online. This honey is a product of the usa and helps support local beekeepers and the pollination efforts beekeepers provide for all fruits and veggies.

ALSO IT SMELLS SWEETLY OF FLOWERS, AS IF HONEY COULDN’T ALREADY NOT BE MORE CHARMING.

Easy Coconut & Honey Energy Bites
Makes 20 energy bites

2 cups old-fashioned oats
1 and 1/2 cups sweetened coconut flakes
1/2 cup honey (I use aunt sue’s raw & unfiltered honey)
2/3 cup peanut butter
1/4 teaspoon salt
1 cup chocolate chips (optional)

Pulse oats and coconut in a blender for about 20 seconds, until coarsely chopped. Add honey, peanut butter, and salt to blender and mix for about 20 more seconds. Chill dough in freezer for 10 minutes.

Roll dough into 1 and 1/2 inch balls.

To dip in chocolate, microwave chocolate chips on 50% power for 2 minutes, stirring every 30 seconds. Dip balls into chocolate and place on a lined baking sheet or cutting board. Chill in fridge until chocolate is firm.

    I made these and they are delicious!!!! I added 2 tablespoons of hemp hearts and 1 tablespoon of chia seeds. I will be makng these often I have a family that loves energy bites. Thanks for the terrific recipe!!!!

      1 cup ground flaxseed = 140g
      ⅔ cup honey = 150ml
      2 teaspoons vanilla

    The coconut-honey energy bites are excellent. I love the sensation of chewing to satisfy & these little morsels do the trick for me. But, I must be mindful of the calories. However, one or two will keep you full in between your meals. Do not make the balls large.

  • These are awesome and very tasty. A galpal at work brought these and sent me the recipe. I’ve been reading some of the comments.
    To reduce sugar try Agave Nector and 100% natural Peanut Butter (keep it in the fridge, it will separate, just stir)
    This recipe can handle SO MANY variations, have fun people and experiment.

      Zoe, you can use any nut butter that you are are not allergic to. I have not tried any others (no allergies here). I have a friend that used sunflower butter and she said it was great.

    I just made these, but did not use the coconut and they turned out delish, I found them very easy to roll as well. Just wonder if sesame seed would taste good or even adding fruit such as prunes or dried craisens.

    Flaxseed will just go right thru you if you don’t grind it a bit…whole seeds do nothing for you!!

    Hi Rachel,
    Just a quick note to say that I have enjoyed everything that I have made from your blog.
    That being said, is there an easy way to roll up these energy bites? I am using a lot of energy just trying to get them to stick. They are not very pretty to look at.
    I did use almond butter instead of the peanut butter and ground flax instead of whole.
    Any suggestions?

      Yes! I just used a cup of ground flax
      and they turned out great! I did not have
      honey so I use 2/3 cup of pure maple syrup.
