A friend of mine once made me a panini with green apples and it was so yummy. Fruit also adds a great texture and sweetness to this quesadilla.
Arugula & Red Pear Chicken Quesadilla
Makes 2 quesadillas
4 tortillas
1 red pear, sliced
1 white onion, sliced
1 grilled boneless, skinless chicken breast, sliced
2 cups mozzarella, shredded
2 cups arugula
Caramelize an onion on medium heat until golden brown.
Place a tortilla in pan over medium high heat and add a layer of cheese. Allow to melt for 1 to 2 minutes. Add red pear, chicken, arugula, and onions.
Sprinkle on another layer of mozzarella and place a second tortilla on top. After about 5 minutes, carefully flip the quesadilla. Allow it to brown for about 5 more minutes before slicing and serving.
