CROCK POT SANTE FE CHICKEN

I possess a kitchen appliance that many might call excessive, frivolous, or unnecessary. But let me tell you, it’s wonderful. This wonderful device I speak of is the rice cooker.

If you’re thinking you can make rice on a stove top and it’s not that hard, I thought the same thing. And then I got one just because I was making rice so much. And it was 100% worth it. If you’re on the fence definitely pull the trigger. It’d be a really nice gift for new moms too, because when you haven’t slept in two days, I imagine not having to oversee a boiling pot of rice is fantastic.

For this Sante Fe style dinner, throw everything in the crock, set your rice cooker, and dinner is done for you.

CROCK POT SANTE FE CHICKEN
Serves 3-4

4 boneless, skinless chicken breasts
2 cups tomato sauce
15 ounces black beans
15 ounces diced tomatoes
15 ounces corn
1/4 cup cilantro, chopped
1/2 red onion, chopped
14 ounces vegetable broth
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon red pepper flake
1 teaspoon paprika
1 tablespoon chili powder
Salt & pepper
Rice, tortilla chips, and/or tortillas

Combine all ingredients into slow cooker and lay chicken breasts across top. Season with salt & pepper.

Cook on low for 4-6 hours. Drain liquid from basin. Remove chicken and shred. Return to pot and mix. Serve with rice, tortilla chips, and/or tortillas.

    I’ve recently discovered your blog and am thoroughly enjoying it. As for your recommendation regarding a rice cooker… I give a big amen! much of Mr childhood was spent on Guam, where I learned to love rice. After I was married my grandmother gave me her Panasonic rice cooker. I’ve used it for 36 years and cannot imagine hassling with stove top rice!
