Avocado Pesto Pasta

Let us lean in now for a not-so secret idea for dinner. Pesto on pasta, that is nothing new. How about a healthy ingredient to make that pesto sauce silky smooth. And even with a nutty flavor. Avocado. Typically, if a pasta sauce is extra tasty, I also expect it to be extra not-so-good for me. Delighted girl am I that this trick lies with none other than our good friend, the superfood (whatever that means). Come now, let me show you.

AVOCADO PESTO PASTA from Rachel Schultz

AVOCADO PESTO PASTA
Serves 3-4

1 pound pasta, cooked al dente
2 cups my favorite pesto
1 avocado
3 chicken breasts, cooked & shredded (optional)
Parmesan, grated

While pesto is still in food processor, add avocado and pulse until creamy.

Combine avocado pesto with cooked pasta and chicken. Top with parmesan.
