THAI CHOPPED SALAD

Even with meal planning, sometimes it’s easy for the schedule to get away from us. Near the end of the week, we may not have as many extras or meals scheduled as we needed. We’ve been making a concerted effort to go out for dinner less. I’ve found it’s really not hard for me to resist being tempted to go to restaurants ($$) if I have what we’re eating planned and all the ingredients are on hand. So when I’m craving some thai that would be a short drive a way and cooked by someone else, (but also twice as expensive ), I throw together this awesome chopped salad. Dining out crisis: averted.

THAI CHOPPED SALAD
Serves 3-4

1 batch coconut curry dressing
1 head napa cabbaged, chopped
3 chicken breasts, cooked and cubed
1 red pepper, diced
1 carrot, chopped
1 mango, diced
1/2 cup peanuts, crushed
1/2 cup cilantro, chopped

Toss ingredients together in a large bowl. Drizzle with coconut curry dressing.

Instructions
