Salmon Sliders with Avocado Dill Sauce

In my book, the summer should ideally include lots of meals with at least one grilled element. As apartment dwellers (still), I totally miss on the grilling party. A dish like this still brings the lightness and freshness of what summer dinners ought to feel like if you are also operating sans grill or get rained out.

I use this method for cooking salmon perfectly in the oven.

SALMON SLIDERS WITH AVOCADO DILL SAUCESALMON SLIDERS WITH AVOCADO DILL SAUCE
Makes 8 sliders

1 pound salmon filet, sliced into 8 square pieces
1 avocado
1 teaspoon red wine vinegar
1/4 cup fresh dill
1 lemon, juiced
1/2 teaspoon red pepper flake
1 teaspoon honey
2 tablespoons olive oil
Red onion, sliced
Romaine lettuce, sliced
8 slider buns
Olive oil
Salt & pepper

Sprinkle filet with salt and pepper and drizzle with olive oil. Lay salmon on a lined baking sheet and place in a cold oven. Heat to 400 degrees and remove from oven after 25 minutes. To make dill sauce, combine avocado, red wine vinegar, dill, lemon juice, red pepper flake, honey, and olive oil in a food processor. Pulse until smooth. Assemble sliders on buns with salmon, red onion, lettuce, and dill sauce.

    My oh my, that lovely lady does indeed know how to cook. I want that Salmon with Dill Sauce. I used to grow Dill. I think I’ll make Salmon Patties with the Dill Sauce. Thank you!!!
