CINNAMON SWIRL QUICK BREAD

Once fall hits, my cinnamon and nutmeg stores better be fully stocked. I have been mowing through the stuff lately. And for this bread, of course, we have our beloved cinnamon sugar.

My ideal cinnamon sugar ratio is about what we have in this recipe – two teaspoons cinnamon for every 2/3 cup sugar.

Serves 2 loaves

1 cup butter, softened
2 and 2/3 cups sugar, divided
2 eggs
4 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
2 cups buttermilk

Preheat oven to 350 degrees. Beat together butter and 2 cups sugar. Add eggs, continuing to mix. Add flour, baking soda, and buttermilk, mixing until an even batter forms. Fill greased loaf pans with half of batter. Stir together cinnamon and 2/3 cup sugar. Pour 1/4 of cinnamon sugar in each loaf pan. Transfer remaining batter to loaf pans. Top with remaining cinnamon sugar. Using a butter knife, gently swirl cinnamon sugar into batter. Bake for 45-50 minutes.
