Romesco is a sauce made of roasted red peppers and nuts. We do almonds. I also like to put in a dash of red pepper flake for a little spice. (FOR DAVID, the spice lover of course. But also me and everyone.) And garlic, as well. Always garlic. Pulse this in the food processor or blender a few times are you are ready to rock. Of course you can put it on pasta, and I THINKK YOU SHOULD MAYBE EVEN CONSIDER GNOCCHI!!
ROMESCO SAUCE
Serves about 1 cup
12 ounces roasted red peppers
1/2 tomato
3 cloves garlic
1/4 cup almonds
1 tablespoon olive oil
1 teaspoon red wine vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1/4 teaspoon parsley
A dash of red pepper flake
Place ingredients in food processor and pulse until smooth.
