Crock pots are amazing little wonders. Will my newlywed intrigue soon fade? I delight in checking it every 30 minutes, with new astonishment of how little work I am doing. David had work off today, so I wanted to give him a chance to fascinate and marvel the way I do. We’re just child-like in that way. I acknowledge this is ridiculous but I’m learning a lot in the domestic world and things are new. A dressing I like using for this dish is Simple Truth Italian.

It’s not the weird orange color while still being homogenous (compared to ones where the oil and vinegar separate) which is good for crockpot stuff or marinades.

SLOW COOKER ITALIAN CHICKEN

Slow Cooker Italian Chicken
Serves four

1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon oregano
4 boneless, skinless chicken breasts
1 and 1/4 cups italian dressing (about 12 ounces)
4 large white potatoes, quartered
6 carrots, sliced
Parmesan, grated
A dash of red pepper flake

Season chicken breasts with salt, pepper, and oregano.

Place chicken breasts into slow cooker and pour in italian dressing. Place potatoes and carrots on top.

Cook on high for 5-6 hours or low for 7-8 hours.

Top with parmesan and a dash of red pepper flake.

    I made this yesterday. I had some fresh asparagus, so I threw it in the slow cooker about an hour before dinner. YUM! This is one recipe that will be used frequently in my house.

    FYI: As an alternative, I used Greek Vinaigrette dressing instead of Italian. It includes Feta cheese, so I left off the Parm. It was very good too!

    Rachel thank you …love recipe I am making for 4 the time…I use boneless thighs….Newman’s lite Italian and last batch I added a little chicken broth ..used a large pkg of thighs so do low 8 hr . Great

    Its definitely 3-4 hours on high not low! After 4 hours of being in my crockpot, the potatoes were still hard! :(

    Followed recipe and my potatoes and carrots were still uncooked and hard after 4 hours cooking on low. I only used 3 small potatoes cut in halves and 3 carrots cut into sections. What went wrong?

      A lot of slow cookers are different. My slow cooker cooks on low like it would on high. I never use high because everything would come out like molten lava. lol Also, it depends on how big you cut everything and how thick your chicken is!

    Help… I’m reading thru all your comments and the times and info vary a lot since you first posted. You have on here 3-4 hours on low… But within the comments 6 hrs on high is fine. I’m confused and really want to make tonight! I have standard thickness chicken.

      Yes, definitely.

    This looks good but I’m confused about the time. How can 3-4 hours on low, or 8 hours on low, or 6 hours on high all yield the same result? Does it just depend on the thickness of chicken breast you choose?

      Yes, there is a lot of variance based on the cut you’re using. Also, all slow cookers are very different. My advice would be to just know your cooker and how it operates. Keep an eye out and it should do fine!

    This recipe sounds amazing and I can’t wait to try it! I’ve had bad luck with chicken in the crockpot though, would 8 hours on low be too long? I would like to be able to put it on in the morning before I leave for work, I’m not close enough to home to do it over lunch.

      That would be fine. I’d aim for thicker chicken breasts if possible.

      It varies a lot depending on your slow cooker. I’d try checking it often the first time! Start with around the same.

  • I made this today to host a few friends for Father’s Day lunch. I used chicken tenderloins and Italian seasoning instead of chicken breasts and oregano because that’s what I had on hand. I also cooked it for about 4 hours on high. I started the crock pot as we left for church and the food was ready when we arrived home. Everyone enjoyed it. Thanks for the recipe!

      Pour the rest of the dressing that you have not poured into the crock pot in at that time.

    • In the beginning your pour a small amount into the base of the slow cooker, and on that step you pour the rest in. Thanks for the question, it should say “into” instead of in.
