salmon & lime rice salad

We recently watched a documentary about grizzly bears called Grizzly Man. This movie is absolutely ridiculous. It’s a true story of some crazy dude who lived with bears for 13 years. He was eventually killed when a bear attacked and ate him. I don’t know how to gracefully transition from that to this salmon recipe other than this picture.

Maybe this movie subconsciously inspired a salmon craving?

Salmon & Lime Rice Salad
Serves 3-4

1 pound salmon filet, prepared perfectly
1 lime, juiced
1 tablespoon olive oil
1 tablespoon honey
1 tablespoon dijon mustard
3 cups rice, prepared
1 cucumber, diced
1 bell pepper, diced
1/2 cup cilantro, chopped
Salt & pepper

In a small bowl, whisk together the lime juice, olive oil, honey, dijon, and a dash of salt & pepper. Use two forks to shred salmon.

In a large bowl, add salmon, rice, cucumber, bell pepper, and cilantro.

Pour in lime mixture and toss to coat.

Rachel!
I made this tonight for dinner and my husband and I loved it! It is a definite on the make again list. I left out the cucumber as neither of us like them. It was easy to make and 0OOOH SOOO GOOOOD!
