Sunday we had this event where many members of church brought in homemade pies to distribute to people in our surrounding neighborhood. I volunteered to make some, and had to use all of my self control to not eat one. (I am purposefully avoiding the awful fruits of the spirit pun I could make right now.)
Anyway, I’ve had a sweet tooth for pie ever since and thus this healthy alternative was born. And it tastes identical to a warm, fresh apple pie. Plus, there’s only six ingredients in the whole thing (or five if you skip the brown sugar and make it even healthier).
Spiced Apple Pie Oatmeal
Serves 7-8
1 cup of steel cut oats
3 apples, diced
1 cup apple juice
3 cups water
1/4 cup brown sugar
2 tablespoons cinnamon
Combine all ingredients in slow cooker.
Cook on high for 2-3 hours. Stir once each hour until mixture reaches your preferred consistency.
Top with brown sugar.
