Chili is one frequently occurring weeknight dinner in our house. I also go for it a lot when cooking for gluten free friends. My recent way of livening things up in the chili pot – adding the rich, nutty flavor of hummus! Are you intrigued? The hummus I used here, which could actually add some interesting depth of flavor to the chili is this jalapeño curry hummus. Some other hummuses I have shared about are “everything bagel” and ginger & cilantro.
HUMMUS CHILI
Serves 5-6
1 pound ground turkey
1 batch jalapeño hummus
1 onion, chopped
1 red pepper, chopped
4 garlic cloves, minced
1 tablespoon chili powder
1 tablespoon cumin
30 ounces black beans
28 ounces crushed tomatoes
1 chipotle pepper in adobo sauce, chopped
1 tablespoon adobo sauce
1 teaspoon dried oregano
1 cup corn
Jalapeños, sliced
Tortilla chips
In the base of a stockpot, begin to brown turkey. Add onion, red pepper, garlic, chili powder, and cumin and continue to cook until meat is browned. Add black beans, tomatoes, chipotle pepper, adobo sauce, oregano, 1 cup water, hummus, and salt & pepper.
Cover and simmer for 30 minutes. Stir in corn. Serve with jalapeño and tortilla chips.
